At Good Hemp we’re firm believers that most things are best kept simple. Here, a blend of parsley, rosemary and thyme lifts the delicate flavour of this cod loin, while hemp seeds add an extra crunch as well as a boost of omega oils and fibre. Served alongside lemon and a pile of steamed green vegetables, this is a light and healthy midweek meal. As ever when sourcing seafood, look out for the blue MSC label to be sure it’s sustainable.
Preheat the oven to 180C.
Place the cod loins on a sheet of baking foil in a baking dish.
Add the Good Hemp oil and salt and pepper.
Mix all dry ingredients in a bowl.
Add the whisked egg to bind everything together.
Spread the mix along the top of the cod loins.
Wrap baking foil over the top of the cod, then place in the oven for 15 minutes.
To finish, open the top of the foil and place under the grill until golden.
Serve with a wedge of lemon and steamed green vegetables for a light and tasty meal.
