Vegetarian Toad in the Hole

This is a fantastic, hearty recipe for those cold evenings when you fancy something comforting. If you're not vegetarian you can simply replace the veggie sausages for pork ones! Simple to make, with all the GOODness of Hemp Oil and Milk. Yes please.

What you’ll need:

For the Toad in the Hole:

  • 300ml Good Hemp Milk Original
  • 2 tbsp Good Hemp Oil
  • 115g plain flour
  • 4 large eggs
  • 8 vegetarian sausages
  • 2 tbsp chopped fresh rosemary leaves
  • 1 tbsp wholegrain mustard
  • salt and pepper

 

For the Gravy:

  • 1 tbsp Good Hemp Oil
  • 2 red onions, finely sliced
  • 2 tbsp plain flour
  • 200ml vegetable stock
  • 150ml red wine
  • salt and pepper

Method:

To make the Toad in the Hole:

  1. Sift the flour into a large bowl and add a pinch of salt and pepper, make a well in the centre and crack in the eggs.
  2. Gradually mix the eggs into the flour and then slowly pour in the Good Hemp Milk until you have a smooth batter.
  3. Stir the fresh rosemary and mustard into the batter and leave it to stand for 30 minutes in the fridge.
  4. Preheat the oven to Gas 6 (200C/400F).
  5. Brown the sausages in a non-stick frying pan and set aside.
  6. Pour the Good Hemp Oil into an oven-proof dish, add the browned sausages and place in the oven for around 5 minutes until the oil is hot.
  7. Pour in the batter and immediately return to oven. Cook for 35-40 minutes until well-risen and golden brown.

To make the gravy:

  1. Fry the onions in the oil over a medium heat until they are soft and golden brown, about 10 minutes.
  2. Add the flour and cook this with the onions for 2 minutes.
  3. Stir in the stock and wine and leave the mixture to bubble for 3-4 minutes, stirring constantly to avoid lumps.
  4. Season with salt and pepper and serve the gravy with the toad in the hole, alongside some steamed veg.
