What you’ll need:
- 12 tbsp Good Hemp Oil
- 110g golden caster sugar
- 50g hazelnuts (optional)
- 175g plain flour
- 150g cornflour
1. Preheat the oven to gas 2 (150C/300F). Place the hazelnuts into a food processor and process until they are finely ground. Add the rest of the dry ingredients and pulse until mixed.
2. With the motor running, slowly pour in the Good Oil until the mixture amalgamates. Tip into a shallow tin and press down so it is level and even.
3. Prick all over with a fork and then place into the oven for around 60 minutes to cook. When it is cooked it will be pale golden brown and will feel soft. The shortbread will harden as it cools.
4. Immediately cut into 12 pieces and after 5 minutes, transfer to a wire rack to cool.
