Christmas Pudding Volcanoes & Hemp Ice Cream

Get in the festive spirit with these little beauties. Delve into each Christmas pudding and let the rich nutty butter ooze out like lava! Served with HEMP ice cream. Made by the lovely Ginger Vegan.

What you’ll need:

Christmas Pudding Volcanoes:

  • 100g dark brown sugar
  • 85g margarine
  • 50g Good Hemp Raw Protein Powder
  • 35g plain flour
  • 3 tbsp ground flax seed
  • 80g dried mixed fruit
  • 115ml Good Hemp Milk Original
  • 1 1/2 tsp mixed spice
  • 1/4 tsp ground ginger
  • pinch ground cloves
  • 4 tsp smooth nut butter - cashew works very well

Hemp Ice Cream:

  • 150g cashew nuts, soaked for 3-4 hours
  • 35g Good Hemp Seed Hearts, soaked with the cashews
  • 1 1/2 tsp vanilla extract
  • 2 tbsp Brandy (optional)
  • 250ml Good Hemp Milk Original
  • 5 tbsp fruit syrup or maple syrup


Christmas Pudding Volcanoes:

  1. Preheat the oven to 180C, Gas Mark 4
  2. Grease and flour 4 mini pudding moulds.
  3. Cream together the sugar and margarine.
  4. Mix together the protein powder, flour, flax seed and spices and then add to the margarine and sugar.
  5. Mix well and gradually add the milk mixing until smooth.
  6. Put 1/8 of the mixture into each mould.
  7. Put 1 tsp of nut butter in the middle of the batter and then cover with the remaining batter.
  8. Bake for 15-17 mins until the top begins to crack.
  9. Remove from the oven and turn out onto individual plates.
  10. Serve while still warm with Hemp Ice-cream.

Hemp Ice Cream:

  1. If you forget to soak the cashews beforehand, you can speed soak them for 30 mins in boiling water.
  2. Drain the cashews and Hemp Seed Hearts and place them in a blender with all of the other ingredients. Blend until very smooth.
  3. If you have an ice cream maker, freeze according to the manufacturer’s instructions. If not put in a container in the freezer and stir vigorously every 30 mins until too hard to stir.
  4. Enjoy with the Christmas Pudding Volcanoes or on its own!
